The Ten Minute Breakfast That Got Me Through Rehearsals

Rehearsals are a weird time for us theatre folk. We are required to be fully functioning during the day instead of the night time like we usually are. Therefore everything has to adjust, including sleeping, eating and exercise patterns.

I initially found it really tricky to know when to eat breakfast because I needed time to digest but I also needed fuel to be able to concentrate.

My darling fiancée made these for me most mornings during West Side Story rehearsals and they were a life saver.

Banana Oat Pancakes

Prep time: 5 mins

Cook time: 10 mins

Total time: 15 mins

Serves: 2

Ingredients

  • 1/2cup organic oats

  • 2 large eggs

  • 2 ripe bananas

  • 1/2 tsp cinnamon

  • pinch of baking soda (for fluffiness- you can omit)

  • Pinch of sea salt

  • Butter, ghee or coconut oil for lightly greasing pan

  • Any toppings you like. On the go I use butter and peanut butter or I throw in some organic blueberries/raspberries onto the pancakes while they’re cooking and top with almond butter.

Instructions

  1. Blend all ingredients together or alternatively combine all of the ingredients in a large bowl and mix well.

    1. Heat a frying pan over medium low heat and grease it lightly with butter or coconut oil.

    2. Pour the batter into the pan

    3. Cook the pancakes for 2 minutes on each side. Serve warm or cold with whatever toppings you like!
